Hi, I'm looking to connect my pan to the stack but. From the pan it will run through a wall with a fall and then turn 90° and fall again to the stack. Because of the 2 gradients and the bend the angle becomes compound and the pipe will not be parallel to the wall. The pipe from the pan to the 90° bend is short. Could this be horizontal to allow for a parallel run along the wall? Hope that makes sense.

Yes the short pipe from the pan will be fine horizontal - it's quite usual to do this from a horizontal outlet pan- you could try and get a slight fall if it doesn't disrupt installing the rest of the pipework.
