Grand vitara temperature issue ?

Grand Vitara,2000 petrol,54 plate

Temp gauge reading normal most of the time but then without warning it's just before the red, it doesn't climb up slowly but more like blink and you miss it go from here to there.
Can drive for a while then the opposite where the needle is back to the normal position, sometimes creeps down or blink and you miss it again.
Checking water level next day when cold it's on the max mark and no water is lost.
I did recently change the anti freeze and thermostat as I thought it was the thermostat but it's still the same.
No air locks, heater has warm air, water level on expansion bottle on max line.
 
Sounds like a faulty temperature sensor, if the temperature is suddenly increasing you should notice a considerable increase in heater output if its on full.

If there is an increase in heater output would that then say the needle is reading the correct temp,i mean if the temp switch is faulty would the heater output not just stay the same.
