gravity dehumidifer with condensate pump?

Would the pump below work with the dehumidifier?

The idea is to connect the pump to the dehumidifier continuous drain pipe.

Absolutely no reason it wouldn't. It works using a level switch internally so when the fluid level is high enough it activates the pump.

I would go for a cheaper option though as they all do the same job and that's one's pretty expensive being a Vaillant. I believe the Grundfos Condi pump is significantly cheaper.
 
As above will work fine just go for a more cost effective version!
That type of pump is regularly used on air con units as well as boilers,
The commercial type of dehumidifier has a pump built in.

It looks like it has an extra set of wires for an alarm. Can I just tape these up unused?

All condi pumps have an interrupter connection. All it does is break the boiler's power connection so it won't fire if the condi pump fails and overfills. Yep, not required in your situation.
