Grease pipe exposed to cold ambiant air

Can I use a 140 ft. long, 4 in pipe exposed to cold air (40F) to drain a three compartiment kitchen sink? Is there a chance that grease could solidify and cloggs in the pipe before reaching the grease trap?
 
Not sure about canadian waste systems, but 140 foot 4inch exposed pipe in cold climates frightens me. The only way I could envisage this would be to have several inspection openings to enable cleaning to take place. I'd be very worried about it blocking with water in the winter, freezing and cracking.
