Just get biggest whacker plate the space will accommodate .
For a 'normal' whacker plate (50/60kg) it is recommended to do a few inches at a time.
Don't soak it, if it's dry it might benefit from a sprinkle of water.
If it's too wet, you might have to give up, as it can just all start turning to soup
