I'm installing a Hardiebacker board in a bathroom onto a brick wall. What adhesive should I use & which screws?

I wouldn't put one on a brick wall, I'd render it, but if you must then use Rawl plugs and 25mm wood screws (stainless if you think they'll rust (but this means your tiles are leaking)) Bed the board on tile adhesive.

Do I have to do anything to the brick first like pva or not?

If rendering then yes, if using tile adhesive then follow the manufacturer's instructions - they often seem to prefer SBR as a primer.
