If you check your meter readings regularly, you should also see average daily electricity use drops by a few kWh per day. Possibly a pound.
Energy from electricity costs about four times as much as energy from gas, so if you are lucky enough to have a gas boiler, the immersion heater is a backup for those rare occasions when the boiler is not working.
BTW you should also lag all those hot copper pipes. If you see any joints with patches of green corrosion or white limescale, polish it off with water and a green pan scourer. If it comes back you will know there is a bit of a leak.

OK. It does help others following, if you quote the post you're responding to.
If you want lower temps at point of use then you'll need TMVs either within the outlet or upstream.
Suggest testing that the Immersion stat is working properly at its new setting by switching it on with the boiler HW programmed off and measure the temperature.
Older ones, with no overheat cutout, sometimes fail "on" resulting in scalding water which had led to some terrible results.
