Hotmail upgrade to Outlook, Show ALL contacts

I have been using hotmail for about 20 years for personal use.
It is now upgrading to Outlook, which it did all ok.
When I now want to send email, I cannot see a list of ALL contacts.
I have been searching now for a couple of hours, anyone got any tips.
Yes if I enter the first few letters of their name I find it, but I like how it used to be.

If you click on the "To" button, it's just above the contact pane where you type the contact's name, it will expand the contacts list.
I liked the old way too and would revert, if I knew how.
