How hot should a combi pump get ?

If your boiler water temp is set for 60ºC the pump could get close to that. It's painful to keep your finger in contact with something at 50ºC for any length of time.
 
The boiler water temp can be adjusted but is usually too hot to hold but you can touch for a second or two. It depends on what your boiler is set to. Even if you don't have the CH on, the boiler water still goes through a heat exchanger to heat the domestic HW.
 
It depends on the boiler model but could be as much as 90 degrees C.
