How many windows need to open in a room?

Hi all -

Having a extension built which is 3.5m x 4m off a kitchen or a similar size to create an open plan kitchen/diner. The new portion will have a vaulted ceiling with three roof lights. I’m currently choosing windows (both wall and roof) and trying to work out the importance of an option of opening. The extension will have an 8ft sliding door but I’m not sure if it’s recommended that all windows open or the roof ones will be enough or if roof windows with openers are a ball ache. Essentially I’d love a large landscape window that doesn’t open to offer an uninterrupted view but not sure if I’d regret it.

Basically just after some thoughts from people wiser and more experienced than me. Thanks in advance!
