There are so many variables that it's difficult to advise you:
briefly,
typical residential, load bearing footings/foundations might be dry, but still weak to work with, after say, 4-5 days.
However, if better curing and form stripping is to take place you might have to wait for 7 to 14 days.
Dont attempt to load concrete that is "green" or still looks damp.
