Hoping someone has come across a set of taps like these before. They are currently dripping and I want to replace the washer, but cannot figure out how to get into the tap! These taps are at 40 years old and the centre bits do not appear to prise off.

Any suggestions?

Well I would but the centres are completely round with no visible way of getting a grip to unscrew (see picture). There are also no grub screws that I can see.

you need to either prise off or unscrew the coloured discs, be careful not to damage the edge, use a stanley knife blade to prise off or a pr of grips to unscrew
