What actually makes it stay on?

the thermocouple sends a voltage to the gas valve when the pilot flame warms it up

AS lpg is will probably be a dirty pilot!
If not it will be thermocouple or gas valve gone(more likely thermocouple)

Have you check the upso hasn't tripped.

If it's the thermocouple don't waste money with a 'universal' one as it will not last. You need an LPG version.
