don't touch the cable or probes? I'll have to touch them to do the test?! i've tested continuity so the stat is not working, so this test is just to prove in other words voltage is getting the to heater (ie the fuse hasn't blown)?
tested N to T on resistance, the 200K setting. Just flashed a few random numbers then went back to 1. (which is the normal setting).
It does not sound to me as if you are competent to make these measurements if you cannot interpret the reading you have obtained.
An immersion element is about the most basic circuit you can find, a resistor in series with a switch!
As I said before, voltage measurements will probably be more relevant. It will not work without an applied voltage!
