I have a single skin parapet wall next to my roof. I need to put some flashing in and am wondering whether it is acceptable to install the flashing on the top bricks and then install the coping on top. The flashing is for an abutment vent and I don't want to lay another course of bricks.

Yes but the coping must be securely fixed. My solution for that is to fix each coping with retaining clips. I specify stainless clips with a cross bar. One gets fixed into the laid coping and the next coping slots into the outer part of the bar and provides the next bar for the next coping. You won't get a word of that so here's a photo. We bond the copings with black CT-1 - not mortar.

Where did you buy the retaining kit from ?

The gap is typically a mortar joint width:

Widely available, just google stainless steel coping fixings or similar.
