I`m going to replace my internal doors with like for like hollow doors.
One of the frames looks to have a slight bow in the middle on the hinge side.
Would you plane the door to fit the frame or plane out the bow in the frame itself?

Jase.

Preferably the door lining.A fixing in the centre of the bow would ensure no further movement.

Neither. You always try to pull a door lining or casing straight and flat, never (or at least only in extremis) plane it. Fixing points should ideally be at about 5in (125mm) up from the floor and the same down from the head plus (nowadays) two additional rows at about 1/3 and 2/3 of the distance between the upper and lower fixing points. This means your fixing points miss the top hinge (6in/150mm down from the head), bottom hinge (225mm up from the floor) and centre hinge (if any) or lock keep (depending on the side). Having two rows of screws isn't absolutely necessary, but does help you take twist out of a casing or lining if there is any as well as stopping any occcuring over time. A 6ft ft and a 2ft level are ideally required - you cannot see bow (which shows up as pin cushioning or barrelling) without a long straight edge - even lasers aren't as accurate as a straight edge
