If you want most of the stress from heavy joists to be supported by front and back walls, you need any weaker wall between front and back to be an additional support, not a main support. Right?

Is there such a thing as a double joist-hanger that supports joists either side of a central wall?

The joist doesnt know that, it will transfer whatever load its carrying at the position of the joist hanger, to whatever the joist hanger is fitted to.

Actually, in that case the majority of the load will be on the central wall and not as much on the outside walls.
As notch mentioned the joist just loads whatever is there
