It's because Trades are in general, lazy f@ckers. They want the easy route out. Unless you specifically specify otherwise. Of course, why not? Time is money.

I'd hacked off all of the loose plaster and asked them to bond out level and then skim. I came back to find that they'd done exactly as you have experienced. They'd simply plasterboarded over the whole lot and then skimmed. I'd lost two inches.
Bloody fuming, I worried that my new kitchen design would no longer fit and the door would have to be smaller (could I now fit a washing-machine through?) Luckily, it just-about worked out still. My doorway was 605mm wide!
Lesson leant. ALWAYS be on site with trades around and keep popping your head in on them from time to time.

Maybe it's the same people . I had the exact same concern as it's the kitchen and there is a pantry door. I am not overjoyed as it means the kitchen unit will be closer to the door, which is not the look I wanted.
I'm worried it's going to look silly now if the door is flush with the unit.

They said it was so uneven so they had no choice but there has to be other options. Ours is not the first kitchen over the past 124 years of the house and the others managed it.

My partner came home last night and realised it looks smaller. Even 2 inches makes a difference.

I can't think about it too much or I will end up in tears. It's stressful as we are doing so much work putting the house back to how it was originally. I didn't mind it looking uneven, if I wanted perfection I would buy a new build.

Maybe one dear I can rip it down.

There is an option of course but, it will cost time and money. The option would have been to either entirely remove all of the old plaster back to brick then, bond and skim or, assuming some of the old plaster is sound, then bring the bonding coat up to the same level and then skim the lot.
It's up to you. The existing plasterers are not going to do it for nothing. They've done what they thought best (easiest) at the time. Without a full spec, it's left up to interpretation.
Maybe get another, trusted / recommended plasterer in, show them the pics of before etc and get their advice and a quote to hack it all off and start again. It may be that a) It's too expensive to be worth it or b) not possible or c) you just have to live with it.

There's no way I'd have someone putting in a new kitchen without talking through the process, both beforehand and as you go along. Check in each morning as you're making them a brew - ask questions, appreciate their work, raise concerns, be clear about what you want and don't want...
