Hello, long time reader first time poster.

I've just had the bathroom replastered, ceiling and walls. For the ceiling I was planning on doing the following:

1 - Sanding with 120
2 - Priming with Zinsser Bulls eye 123 Plus
3 - Painting with Dulux bathroom paint

My questions are:
1- Should I thin down the Zinsser or just use as is?
2 - Do I need to do a mist coat of matt paint before or after the Zinsser?

For the walls I was intending to:
1 - Sand again with 120
2- Do a mist coat of Dulux Trade Supermatt
3- Then paint with the Dulux Bathroom paint again

I've already bought the Zinsser and was planning on picking up the paint this weekend.

Why the sanding? Unnecessary, unless the spread is rubbish

No need to prime either - just a thinned coat of emulsion is fine (and cheaper).

No doubt a pro deco will be along in a minute...

To tell you the truth I have no idea why I'm sanding, it's just what I've read I need to do!

I've also already bought the Primer, so I may as well use it. The bloke at Crown said it would give the best finish.

You don't sand new plaster it scratches it. No need for the zinnser just mist coat the plaster.
Sand after the mist coat to de-nib, fill any flaws in the plaster, sand flush and spot prime with the same paint you misted with.
Little green acrylic eggshell is far better than dulux kitchen and bathroom which is the retail name for eggshell.

Take your zinsser back and buy some cheap contract matt to do the mist coat.
