When fitting isolation valves under a sink or cistern, do I have to use those screw operated valves or can I use machine valves with the plastic levers? Thought they would be easier to use.

Yes always use best quality isolation valves.
In a new house I occupied a while back, the builder had clearly fitted to lowest quality isolation valves he could find. After a couple of years, I had reason to use one of them to isolate the cold water tap to change the cartidge. It was a bit stiff so I used a wrench to turn it, whereupon the central shaft sheared through and a jet of mains pressure shot out. I could stop this by pushing my thumb over it, but I was upstairs and the main water stopcock was downstairs. There was no-one else in the house so I had no option but to run downstairs and turn the stopcock off as quickly as possible. In that time, the bathroom floor was completely covered with water and it was seeping into the adjoining carpet. What a mess!
After that experience I went right round the house replacing all the shoddy isolation valves with top quality ones.
