Kitchen ceiling plasterboard help!

Kitchen ceiling is 16ft 4 by 11ft 7 and joists run parallel to the long wall. I've been advised that its best to stagger sheets with their long edge at 90 degrees to the joists. 6ft x 3 ft would suit me to collect in my car (I live in a rural area) but that would mean something like having a 6ft and a nearly 6ft board for one lenght then a 4 x 3 x 5 on the next? If i use 8 x 4 I can do it slightly differently but then i have a 4 inch wide for the last length? Can i mix widths or can someone tell me how best to do this? if i need to i can get sheets delivered. I intend to use 12.5mm fire rated but does anyone have any advice on best way of fixing and brand of tape to use? Also any suggestions for solid/soundproofing insulation appreciated. And finally square edge or tapered?
