Kitchen plumbing positions?

I'm fitting a kitchen and at the stage of putting all the necessary pipe work in.

What is the standard height for the waste pipe and the hot and cold tap pipes?

Bring them into the sink unit low down, with stop ends. Fit the kitchen and then pipe up to suit, within the sink unit.
 
Or better, for the H & C, fit lever valves and caps. The waste heights depends on the sink, macerator, type of trap etc.

There isn't one. It's all dependent on what's going to be in there, what feeds are needed, where appliances are going to be located, where the current pipework is, etc.

As suggested bring the services in low down into the main sink cabinet and then stop end/valve/seal them. Once everything is known/placed then the final fix can be performed.
