Kitchen sink pull down spray taps

Are these usually single flow? Mix in the tap body. Or dual flow?

Thanks I have one to do mains cold and gravity hot. Would need a single check valve on both supplies?

Or just the cold as it's protecting the cold mains? Will only have 0.5 of pressure on the hot side.

Yes, cold is fine.

Taking the regs into account then it would really be a double check valve, if the spout can reach down into the water in the sink and that water could contain cleaning/disinfecting agents (CAT3).

Most definitely.

Anything with narrow waterways and flexi's will slow down flow, more so with a gravity hot feed and unbalanced supplies
