Afternoon,

Does anyone know why my hot water pressure is lacking?

In the kitchen it seems low. In the bathroom when you turn the bath tap on it starts out ok but then the pressure drops. An when running the bath and when we turn the sink tap on nothing comes out.

Is this normal?

It sounds like you have a vented system with a water header tank in the loft?
There could be a restriction in the tank outlet, thats connected to the bottom of your copper cylinder......does that sound possible?

Well I'd bale out the header tank (turn the water off to the ball valve and run the hot taps) and check the tank outlet......there will be some crap in the bottom of the tank and maybe the outlet fitting (should be 22mm) is crusted in limescale.

Yep - if water can't leave the header tank in any volume, then low hot water pressure is the result.
