latches for 70mm - 3" thick garden gates

hi i have just put up some more fencing to try and stop the dog escaping whenever the kids open the door to the garden the only problem is is that the 2 gates i built in to the fence (2 separate ones) are nearly 3"thick and i am struggling to find a latch that is suitable. ideally it will be a suffolk or ring type latch so i could put springs on the gate to make sure they remain closed.

any ideas welcome, by the way the gates are hit and miss style so i might have to put extra timber in to attach any latch

These lot hand make them, but do off the shelf for thicker doors.
