Our kitchen floor consists of old york flag stones covered with about
an inch of asphalt. The problem is, after removing the chimney and the
kitchen the asphalt in places is missing(where the chimney was) and is
cracked/broken in others.

What would be best used to level the floor and patch the asphalt? Self
leveling screed?

Under the kitchen is a cellar and the flag stones themselves are
slightly damp.

given you have slight damp in the rest of the floor a fast fix would be to use pieces of DPM and in filling over the top with mortar 5:1 containing water proofer (assuming the sub floor is good ie not cracking). would also fill the cracks with mortar.

depends then on what's going to be the finished surface. self leveller could be used to fill the last 3 to 5mm (the motor with remain dusty unless sealed).

obviously the asphalt is nearing end of life and it may be better to take the lot up but then what about taking the flagstones up to cure the damp totally but then its quickly becoming a big job.
