Doing some decorating and replacing the old and tatty plastic switches with shiny new plastic ones. All are are on 16mm surface mount plastic back boxes. Have replaced a dimmer with a one way switch - what should I do with the sleeved earth wire that was not attached to the dimmer switch but floating around in the back box? If there is an option to connect it to an earth terminal should this always be done?

Yes, attach it to the back box screw, if there is one.
