hi guys i want to tidy my loft doing the floor i'm ok with but i want to tidy the roo rafters can i ply these or should i use plaster board.

Plaster board is usually screwed to the rafters.
will i need to strengthen the rafters atall

I wouldn't fix plasterboard to rafters unless I was also doing a proper insulation job with a vapour barrier - otherwise there's too much scope for damp from above or condensation from below destroying the plasterboard.

No need to strengthen the rafters.
For simply "tidying up the loft" there's no need to do anything else beyond screwing up the p/b - ventilation will find its way behind the p/b.
