I have a bunch of loose paving slabs on my patio, if I lift them, clean them off, what is the best mix for fixing them back down?

Yes, but what mix of cement:sand? I have some on the edge of a pool, so they need to be fixed down.
as joe said , sharp sand is best for bedding slabs.
it helps with the "fat" in the mix if you add a shovel of soft sand to every mix. this will give a better finish to the pointing of the joints (if there are any).
mix the mud, 4 sharp sand, 1 soft and 1 cement.
dot mix it too wet.
solid bedding not spotting, gives more durable results.
