Matchboard/beaded T&G bathroom cladding

Hi. I'm planning to refit my bathroom and I like the look of the bead and butt cladding that I've seen up to a dado. From my research I've seen the options are MR MDF bead effect panels or pine T&G 9mm thick. The cladding will be all around the room which'll contain a jacuzi type bath, and I have a young family so you can imagine how sometimes there'll be bubbles all up the walls.

I'm wary of MDF reacting badly to the moisure, even if it is MR. I'm also wary of the trouble with thin pine T&G (tongues split, lengths warped/twisted) and the extra installation time.

does anyone have any further guidance or experience that I can learn from? of course whatever I fit will be sealed fully with paint and silicone in the appropriate joints.
