Measuring an uneven floor

Some of our floors are uneven and unlevel, but how would I go about measuring exactly where the problems are and how bad they are? I presume a straight edge and a spirit level is involved, but beyond that I'd be working blind.

How would a joiner do it, especially if the fix might involve fitting more bracing between the joists - how would he work out what needs bracing and where?

Use a nice long level say 1800mm and go atound the room and map the floor to find the highs and lows
Set a level string line from the high point across joists so you know where to pack up to.

Bracing is to prevent joists from twisting, not realy a fix for leveling.
