We are having an extension built and have been told that we need to have a cavity wall built between the kitchen & the garage. Due to tightness of space, what is the minimum thickness of wall we could get away?

You need a wall to provide sufficient thermal insulation and fire resistance. A 100mm timber stud wall with celotex/kingspan insulation and then 12.5mm plasterboard and skim both sides will do it, but the BCO may want an additional 25mm of insulation across the inside face of the timbers too.
