Missing mortar on roof tiles

So one of the verges looks like it needs to be re bedded as theres lots of mortar missing.

Whats the part that joins the top of the verge called? (with the triangle shaped tiles) is it the hip???
This needs doing aswell.

I need to get some quotes and want an idea of how much work is involved to rebed everything properly and roughly how long should it takes a professional roofer.

P.s ive already got the scaffolding up for access

It's called a bonnett hip and no more than 3 days.
