Monobloc mixer tap: replacing

I am refurbing my 1970s kitchen.
The sink has a monobloc mixer tap. However, I am not sure how to remove the existing pipes to fit a new, identical replacement. The existing pipes under the tap seem to be soldered to the tap. They do not have tap connectors, unlike bath or basin feeder pipes.
So, I will probably have to cut off the pipes and use flexible tap connectors. Which seems a bit of a waste.

Any tips/ideas?

The rising main stopcock is just below the cold feed. So I don't see the need for a service valve on the cold pipe. The hot pipe, yes.
Either way, it is very restricted under the sink. I may have to remove the back panel of the kitchen unit. (At the moment, there is just a small cutout giving access to the pipes behind the back panel.
