More Underfloor Adventures - What do I do here?

Hi All,

Trying to address some issues with our dining room floor. I think it was previously two rooms knocked together, with one side of the opened up area sunken down in middle about 40mm. That was the main issue I wanted to address. Not sure why it sunk but seems like it's settled and not for moving anymore. Separately, found a leak as well in pipes under the ground just where I believe the two rooms used to be separated - assume bricks under the floor is a sign of a previous wall.
On digging up the floor to fix the leak, the subfloor structure became apparent - i'm not entirely sure though if it's a sound structure - pics all attached. To me, it looks like a maybe 2mm screed, maybe some other 5mm screed, maybe 35mm of something red, and what then looks like concrete (maybe 100mm), and below this like aggregate/sand sort of mix.
Firstly does that all look like a normal setup? Could well be fine, i'm not sure.
Secondly, any recommendations on the approach to level out the two areas? Guy repairing the leak suggested digging the whole thing up and redoing it as it looked somewhat suspect (no insulation or dpm apparent). It is a bit patchy shall I say with pipes tracked into floor all over. About 45% of the floor area in the bungalow is suspended timber, this and rest is this setup.
