Had some pointing done on a grey brick wall, we wanted dark grey mortar, the pointer used dye and has made a right mess with his mixes so some sections are dark grey and others are light grey. It's a brand new wall with grey engineering bricks.

Pointer says he will sort it but I know this means grinding out the existing mortar and he will no doubt damage some bricks in the process.

Can you not buy a mortar tint that can be painted onto the joints to dye the mortar?

Not that I know of - the tint disperses throughout the mortar to pigment it - anything applied post mix would be a surface paint.
