Judging by the pic, that cylinder has been there for a few decades, surely a few months is not going to make a lot of difference when you have never been able to use that space for storage.
Tank just supplys hot water to kitchen and bathroom taps no bath as its just a shower room and shower has a switch outside for hot water,stop value is on the outlet after the tank
Won't be necessary - the plumber will install new hot water pipes from the combi to where it needs to go. You can ask him to remove any "dead legs" (as we in the trade call them ) which he'll probably do anyway. You are just decommissioning the cold water tank than feeds the cylinder, as well as the cylinder.
