Put a wooden peg in the other side of the garden and a peg in their side on the boundary.
Measure between them and take note.

Be aware that it is not unknown for pegs on their side to be moved hence the pegs opposite & the measurement.

One at each end of the garden.

Take photo's now, before anything is done.
Along the fence & at each panel, overall view, close ups etc get as many views as you can.

It might be worth getting CCTV installed for proof of wrongdoing, there are no laws preventing you doing so no matter what they try and bluster.
