When changing brake pads I have used a softwood baton to lever the pistons back into the caliper. I haven't experienced any difficulty with this method.

I have seen people mention caliper wind back tools on this site. Is it better to use this tool?

Its obviously better to use a tool designed for the job, but you're not going to do any damage with a bit of wood so carry on i say!
The wind back tool is good for rear brake calipers that have the handbrake adjuster on the piston (like VW, audi etc) as the piston needs screwing back in aswell as pushing back.
