New external pipework for kitchen sink waste etc

Hi all, I have moved the kitchen around and now need to attach sink (and washer) waste outside.

The soil stack is next to it and the easiest method would be to strap boss onto this but my dad (who worked for council on the drains for 40years) has suggested the sink waste goes to an open top drain due to larger amounts of fat/great and waste blocking up the pipes.
And obviously if it blocks up the soil stack, its not great!

So what does anyone think? Should I just strap it to the soil stack or dig up everything and fit a new drain?

straight into the stack, a gully will block up much quicker with fat etc
