New Windows and Lime pointing

Hi
We are renovating an old stone and have installed two new windows. I have been slowly repointing the external walls with pre made lime mortar. The joiner who installed the windows has filled the gaps between the frame and the stone opening with insulation foam. My issue is do I need to remove this before pointing or can I just cut back and make good with mortar. The foam yellow and has to be covered!

Leave it in and it'll help with cold bridging, cut it back a little though and point over as you suggested
 
As an aside, I have never seen foam "yellow", it normally turns bright orange once the UV light hits it. If it has discoloured, the flakey/soft stuff needs removing anyway If you cut it back and leave it too long before doing the reveals, it will go soft again.
