I want a mural on it with some history of Hull, I was thinking a trawler and fishermen which is part of our heritage. Not a load of swear words and zig zag floro lightning streaks
Why not a mural of some Cherry Pickers?
 
yeah not looking forward to that part, I bought a mortar gun to see if that makes it easier.
Mortar gun needs wet mix to go through so as it lime will tend to get shrinkage cracks as it dries.
I would use a course drier mix with a narrow finger towel and beat it back with a stiff brush before it gone off too much

I want a flush point so is that still achievable the way you advise?

Yes, as you hit it with the brush it grinds the surface down so you only tap it lightly .
I don't know the finish your after but old lime pointing has little course bits in it and tapping exposes them on the surface.
I don't know your location but traditional building material suppliers selling bagged pointing mortar in the colour and texture of your area. Ty Mawr lime is ours but further East is Mike Wye.
Mine slightly below the surface in places but natural stone has a pretty uneven surface
