Open laundry shelves - what timber should I use?

The missus has requested some shelves in the new laundry.... Both below the worktop and on wall..... Usually I'd do painted mdf or birch ply, but it's an old house with some exposed old oak lintels around.....

What timber could I use that wouldn't look out of place?

Scaffold boards look good, cleaned and oiled.


Bench in photo is scaffold boards.
