Hi, I am taking down tongue & groove varnished cladding from the upstairs bedroom of mums house. I am wondering whether it is acceptable to screw new plasterboard onto the existing battens? These seem secure enough. Or do I pull them off and find the joists?

Personally, i would pull them off and find the joists. If you're overboarding its not a significant job to do that.

I wouldn't want to rely on someone else having fixed the battens properly and the risk to the plasterboard moving or cracking later.

The fact that they’ve presumably been screwed to the joists should help you find the joists.
