Plaster Boarding in Garage

Hi guys,
Just want to sense check my thoughts on this..

I'm looking to plaster board my double garage ceiling, as it gets pretty dusty and dark in there currently. I use the space quite a bit for projects and a gym, so looking to tidy it all up a bit.

The space is approx 6m x 6m x 2.5m
Timber is 70mm x 35mm, with 22" gap.
It's a single brick garage, adjoining the house with pitched tile roof with some usable loft space, and 2 metal up and over doors.

Question is, should I:
(a) Plaster board the ceiling
(b) Plaster board and skim the ceiling
(c) Plaster board, skim and insulate the ceiling.

I'll use a heater in the coldest bits of winter, but not for the majority of the time.

I'm going to get it boarded, and insulate I think. It will help dampen noise a bit also, and hopefully take the edge off the cold.
