I have fiixed 60mmm insulated p/b to walls but due to the sloping ceiling there is a 75mm gap(should have cut angle on top of p/b ).I have filled the gap with expanding foam and then raked it back an inch from p/b level.Do I now fill this with bonding plaster or is something else a better job?(I intend to scrim + skim over).

I wouldn't put bonding in anywhere 1" thick, not in one hit anyway. can you dab some plasterboard strips in the gap. You could have cut the foam back flush and skimmed straight over it, but never mind.
