Rebated doors

Greetings.

I'm wanting to install two doors into an opening. I'm looking to install one normal width one for day to day use, and then a smaller one which can also be opened if something large needs to be brought through the doors.

Normally these seem to be rebated so they have a good place to meet in the middle.

Is it normal to buy a rebated set of doors, or do you buy normal doors and put some wood on to form the rebate?

I'd probably want to use something like a 1/2hr fire check door. It doesn't really need to be fire rated, they just seem a lot more resilliant against day to day knocks and bashes etc.

do you really need a rebated set of doors?
can you not just have 2 doors,1 (slave)with a cleat attached to it to mask the gap?
then you could fit 2 no flush bolts to it,saves you fitting a rebate set lock/latch.????
