I am just replacing a kitchen sink unit with one that is slightly wider and I will have to take off only a few millimetres of the kitchen worktop to be able to drop the sink unit in. I was wondering what the best way was to remove the excess material so that I will not split the edges ?

my suggestion is a new 101b or d blade in your jigsaw
try cutting to the line if the blade wonders try filing a flat to the line so the blade has a flat face to hit and cut slowly possibly slightly angle into the line
