Removing old mortar

Need to repoint a valley roof, I've removed all the loose mortar but there is some mortar that isn't budging which is stuck to the tiles that I want to avoid breaking.

The tiles are no longer manufacturered and the closest match will look out of place with the difference in colour

What tool would you recommend to remove the stuck mortar? Would a cold chisel do the trick?

Don't want to be applying fresh mortar over old mortar!

If the mortar is on the edges of the tile then a few taps with the side of a trowel normally works
