Replacing internal walls

We recently had a leak which caused our walls around our bath to be water damaged.

It has hay insulation (early 70's house). I called a builder who gave me a quote, but am not entirely sure on the length of time it would take.. hes quoted me for 7 days to remove walls... 1 wall 1700x2000 and the other 800x2000.

I know hes got to build the frame, then replasterboard the walls, and then skim but is 7 days a little excessive?.. its not a load bearing wall or anything like that.

Really only 2 days? Does that include taking the old wall down?

Did think 7 was excessive.. Especially as there are supposed to be two people doing.

Am wondering, is it a relatively straightforward job? Maybe I could do myself but get someone in to skim it?..
